1.stir fry the onion & mushroom until soft in a little butter or oil.
2.cook the pasta to the packets instructions.
3.add the shredded chicken, corn, soup and a cup of water to onion & mushroom and stir until combined.
4.take off the heat and stir in sour cream and drained corn.
5.stir through the past and transfer the mixture to a baking dish
6.top with grated cheese and bake for 20-30 mins or until cheese melted and pasta bake warmed through
any fresh herbs can be added and wholegrain mustard and garlic also work well. also you can change the onion,mushroom & corn to veg of your choice.
I make this when my partner and I go up the river to our friends shack, served with fresh bread, its a real hit :)
