1 kilo green prawns tail left on peeled & deveined
1 kilo potatoes mashed
3 egg yokes
salt & pepper to taste
1/4 tablespoon nut meg
60 grams butter
30 grams extra butter
1 small onion finely diced
3/4 cup dry white wine
3/4 cup thickened cream
10 saffron threads
2 peeled, seeded & diced tomatoes
2 tablespoons chopped parsley
2 tablespoons parmesan cheese

Cook potatoes, put in baking dish & place in oven 10min to dry, remove & mash add egg yokes,nutmeg,salt& pepper mix well
Place potatoe in piping bag & pipe around ovenproof serving plates,brush with melted butter bake in mod oven 20min
Spoon filling in center & sprinkle with parmesan cheese
melt butter in pan add onion cook until tender, add wine & prawns & bring to boil,
remove prawns with slotted spoon & keep warm.
Boil wine mixture until reduced by two-thirds
Add cream & boil until reduced by half.
Add saffron,tomatoes cut in quaters,prawns,stir over low heat until mixture is heated through stir in parsley.
