4 finely chopped spring onions

1 cube vegetable stock
1 cup grated cheddar cheese

Preheat oven to 180 degrees Celcius.
Brush a deep ovenproof dish with melted butter or oil.
Cook potatoes in a large pan of boiling water until just tender. Drain. Layer potato and spring onion on the prepared dish.
Combine the cream, water, stock cube and half the cheese in a jug. Pour over potatoes. Bake for 40 mins or until the potatoes are tender. Sprinkle with the remaining cheese and the chives.
Return dish to oven until the cheese has melted.
