POTATO TUNA PIE

WONDERFUL WINTER FAMILY FAVOURITE, WITH DELICIOUS FLAVOURS EASY TO PREPARE AND CAN BE EATEN HOT OR COLD WITH A SALAD OR BY ITSELF. AND IF YOU ARE DARING YOU COULD PUT INTO A JAFLE SANDWICH DELICIOUS....

Ingredients

  • 2 kilos POTATOES
  • 500 grams SWEET CORN
  • 500 grams GARDEN PEAS
  • 2 tins TUNA IN SPRING WATER/BRINE
  • 2 ONIONS
  • 250 grams SOUR CREAM
  • 50 grams BUTTER UNSALTED
  • 75 millilitres CARNATION LIGHT MILK
  • 100 grams GRATED CHEESE
  • 2 pinches SWEET PAPRIKA
  • 2 pinches CRAKED PEPPER
  • 1 litre CHICKEN STOCK OR VEGETABLE

Instructions

BOIL POTATOES IN STOCK UNTIL COOKED. DRAIN WELL. DICE ONIONS INTO SMALL PIECES. DRAIN TUNA WELL, AND BREAK UP INTO SMALL PIECES. MASH POTATOE WITH SOUR CREAM BUTTER AND CARNATION MILK. MIX THROUGH ONION TUNASWEET CORN AND GARDEN PEAS THROUGH POTATOE MASH. CRACK BLACK PEPPER THROUGH POTATOE. MIX WELL. PLACE IN OVEN PROOF DISH. BAKE IN OVEN @ 160 DEGREES CELCIUS FOR APPROXIMATELY 35 MINUTES REMOVE FROM OVEN PLACE GRATED CHEESE ON TOP AND SPRINKLE WITH SWEET PAPRIKA, PLACE BACK INTO OVEN FOR A FURTHER 10 MINUTES UNTIL CHEESE BEGINS TO BROWN AND BUBBLE.

THIS IS A GREAT DISH HOT OR COLD. YOU CAN ALSO ONCE THE MIXTURE IS COOL, MAKE INTO SMALL PATTIES AND LIGHLY FRY IN OLIVE OIL.
