tomatoes - 2008/07/30 07:41 Hi, I have a heap of tomatoes and am looking for a recepi for tomato paste or tomato puree or whatever else someone might have a suggestion for. Thanks - Evol oh goodness I am completly lost. I hadn't been on site for a while and had to get a new pass word now I want to change it can anyone tell me how lol ta

why not try my recipe for roasted tomato relish(you can find it under yvonne's recipe)or simply make tomato sauce,which you can keep in jars or freeze:
chopped onion
chopped carrot
galic crushed
bayleaf
basil
tomatoes,roughly chopped
salt,pepper
wine to deglaze if you like
sweat off carrot,onion,garlic in olive oil
deglaze with wine,add tomatoes ,bring to boil,season and simmer for an hour.puree in blender and store.

this is a very basic recipe,if you like you can add tomato paste to thicken.or use also other herbs,balsamico,etc. to make a sauce you like.

INGREDIENTS:
Tomatoes Fresh 1 box
Tomatoes Tinned 1 ltr
Tomatoe paste 2 sachets
Oregano Fresh 2 bch
Garlic 2
Carrots 3
Bay leaf 2
White Wine 500ml
Sugar 120gm
S&P to season

METHOD:
(this is an easy one)
Put the wine and sugar into a small pot on a low hea, reduce by at least two thirds. Set aside.
Place the remaining ingredients into a large baking dish,(just rough chop everything)
Be sure to break up the garlic into cloves. Also de-stalk your oregano. Mix tray evenly so your ingredients are well distributed.
Roast for about two hours at 180 until your tomatoes have a little black on top.(not burnt, just a touch of colour, your tinned tomatoes should have formed some what of a skin also.
Remove from oven and allow to cool for a short while.
Chuck it all in the food processor and whizz away smooth.
Add the white wine reduction to your tomatoes.
Pour the whole lot inot a large pot and reduce by a third.
Bottle and re-fridgerate/freeze as desired.
