Crudites and dips are a great snack though tough to get them to eat. If you present it as a rainbow "sun" - dip in middle and rays of vegetables on the outside, young children look at it as more of a fun activity, than a chore. You can ask them to count the rays and as they count them to dip them and see who can make the loudest crunching sound. Or something to that effect. Another way to get them to eat vegetables in ask them to help in the preparation of the meal. Vegetable kebabs are easy and supervised, a young child can help thread the kebabs with different coloured vegetables - a yogurt dipping sauce goes well with that too. Coleslaw is also a favourite of my daughter's. I've started making it myself with a slightly diluted whole egg mayonaisse, instead of the sugary coleslaw mixes you can buy. She loves it.
